Happy Valentine’s Day Friday, everyone!
Great timing, don’t you think? Valentine’s Day landed right on a Friday so we can all unwind and relax with the people we love heading into the weekend. I have five favorites for you this week and as usual, I’d love to hear what made YOUR week so great in the comments below so I can try em’ too! It’s only fair;)

Lincoln turned TWO yesterday and I think his birthday is pretty fitting – right between President Lincoln’s birthday (Nope, his name has nothing to do with this! Complete coincidence!) and the LOVE holiday!
Our pup is a bundle of love, energy, cuddles, and muddy messes and he has brought so much joy into our lives! German Shorthaired Pointers are such unique dogs and if you’ve ever met one (or own one yourself!) you know exactly what I mean. They’re almost human-like in their actions and mannerisms. Think…

…hrumphing around when you tell them not to do something
…winding themselves up when they’re tired (and needing to be put to bed like a toddler)
He has taught us SO many valuable lessons about parenting that we’re sure to put to good use when the time is right!
Growing up, I watched my mom flip through finger worn, sticky pages looking for the perfect recipes to cook for our family. Since then, I’ve wanted to be a cookbook person. So much so that I asked Sam to build me a cookbook holder for Christmas.
One of my goals for the new year is to try cooking one new meal or recipe a week (I haven’t been 100% with it, but I’m tryin’!) and this week I chose PESTO!
I adjusted the Lemon Pesto recipe from Half Baked Harvest’s newest cookbook, Super Simple and served it over spaghetti squash, sautéed Tuscan kale, tomatoes, artichokes, and pan-fried garlic shrimp. Um…delish! Sure, pesto is a bit higher in (healthy!) fats so I had to do a bit of planning ahead for it but MAN was it worth it;)
- 2 packed cups fresh basil
- 28g roasted almonds, pine nuts or pumpkin seeds (I used almonds!)
- 25g raw lemon juice
- 20g olive oil
- 30g parmesan cheese
- Almond milk till desired creaminess
- 50g Tuscan kale
- Salt to taste
- Red pepper flakes to taste
- If you bought your almonds, pine nuts or pumpkin seed raw, roast in the oven and then grind in a coffee grinder or in your food processor
- Add basil, kale, lemon juice, cheese, olive oil, salt and red pepper flakes to your food processor and blend.
- Slowly almond milk a bit at a time, mixing when needed
- Blend until desired smoothness.
I cut back on the olive oil and lemon juice and bumped up the total volume of the pesto by blending in Tuscan kale with the basil. This decreased total fat per serving so I could increase my serving size (aka more pesto for me!). Because I needed more liquid, I added a dash of almond milk, a few tbs at a time until I reached my desired consistency. So if you decide to give this a shot, you do you!
Sure, I am ALL about Valentine’s Day chocolate (don’t worry – I’ll have PLENTY of that today too!) but there is something I look forward to even MORE. If you know anything about me and my love for chocolate, that is really saying something!

Obviously I couldn’t WAIT to see what he had for me this morning and this year is my favorite card BY FAR. Why? Because the only thing I love more than chocolate is Harry Potter.
